Loaded Baked Potato Chicken Foil Packets
(Clean eating and 21 Day Fix approved)
Ingredients:
2 boneless, skinless chicken breasts, cut in half (filleted lengthwise so they are wide and thin)
2 medium size potatoes, thinly sliced (leave on peel for more fiber!)
4 cups of broccoli florets (fresh is best)
1 cup shredded cheddar cheese
8 pieces of fully cooked bacon (turkey bacon, bacon bits, nitrite free, your choice)
salt & pepper
3/4 c Greek yogurt ranch dressing (recipe below)
4 large pieces of aluminum foil
This recipe was intended to be cooked outside on the grill, mother nature had other plans (50* and raining in May) so I ended up baking the packets in the oven.
Directions:
Divide potatoes evenly and place in the center of all four pieces of foil.
Sprinkle with salt and pepper.
Place one piece of chicken on top of potatoes.
Sprinkle each with 2 strips of bacon.
Top with one cup of broccoli and 1/4 cup cheese.
Drizzle with ranch dressing.
Fold up packets tightly and place on a backing sheet.
Bake @ 350* for 30 minutes, check chicken to be sure it is cooked through, if not bake for an additional 10 minutes.
If cooking on the grill or campfire add an extra layer of foil to each packet. Flip packets every 15 minutes to prevent burning.
I imagine you could easily layer all the ingredients in a casserole dish and back with the same results.
My husband said it didn't taste healthy or "clean" at all, which is a huge compliment from him! It is my favorite kind of recipe. No precooking the meat separately and one pan (or none) to wash! It is also super easy to make each packet a little differently to fit the dietary needs (wants) for each family member.
21 Day Fix Containers, Approximately:
2 red, 1 yellow, 1 blue, 1 green
Greek Yogurt Ranch Dressing/Dip
2 cups plain Greek yogurt
1 tsp dry dill
1 tsp garlic powder
1 tsp onion powder
1 tsp dried parsley
salt to taste
milk to taste
Mix all ingredients together. Add milk until you get the consistency you desire. Tastes best if it sits a few hours or overnight in the fridge.
